At Boujon, we love cheese so much that we store it on shelves, so that it is beautifully presented, so that it can breathe and feel at ease, so that it can catch the eyes and noses of enlightened amateurs or novices.
So, when you enter the cheese factory in Thonon-les-Bains, you feel like you're in a library. Books? No, hundreds of cheeses, wisely lined up, flourishing the terroir and raw milk.
The Boujon team, all smiling and round, shares with its clients the taste for excellence, the search for authenticity and the guarantee of “just in time”.
The success of the Fromagerie Boujon owes nothing to chance: if some of the great names in European gastronomy trust it to compose their plates, it is because they know that at Boujon, quality is always at the rendezvous.
Valérie and Frédéric Royer, the managers, spare no time or hiking shoes to select and offer all kinds of top-of-the-range goat or cow cheeses, with raw or cooked pasta.
In their cellar, they pamper all the small shapes (small cheeses), making sure to accompany them to day.
Purchased from select producers all over the world or in the surrounding mountains, the cheeses are brought back to Thonon at the very beginning of ripening and then placed on racks, as in the past, under ideal conditions of monitoring, storage and hygrometry.
The master cheesemaker then gives them a lot of care, rubbing and turning them regularly, in particular, until they are ripened to the heart.
Large forms (e. g. counties) are often refined at the producer's premises, in the mountains, where conditions are most favourable to their development.
